I don't think there are any planned demos as such - just drop by Wolf's on a Saturday and ask ratatosk to give you a demo. He's our resident Press Ganger, after all. If he's not available, I could help you out if I'm there and not playing.
Honestly, the game is not all that different. There are a few changes to the rules so you do need to reread the rules quite carefully, especially if you played MkI.
You can download the pre-print pdf of the core rules here:
http://privateerpress.com/company/prime-mk-ii-rules
A slightly older version of that pdf and the MkII 'cards' are here:

Yeh, Wolf's brought in the books, the plastic heavies and the faction decks for Khador and Cygnar.

Ah, the stat cards? Yeah WM uses them - since Prime, I think. It's just the quick reference cards used when playing. Like the Malifaux stat cards. Some people also use the cards (in sleeves) to track damage - you can just as easily use dice next to the models. They are not 100% required to play but the ease of reference is useful to speed up play.
AT-43 (and CAoR), on the other hand, use the stat cards to sequence and keep track of unit activations.

Actually you need the stat cards; hence why they come with the models as they have grids for keeping track of damage on different locations on the warjacks as well as the amount of life left on casters and solos.
The faction decks contain all the stat cards for units in Mk I converted to Mk II. So, who wants a game over the week?

@bonsai: Notice I said "not 100% required". You don't need them to play. You can just as easily print generic damage grids on an A4 sheet and mark that instead. You can also use d6 for 5 wound models and d8 for 8 wound ones. The cards are just nice to have for the convenience and artwork.
@Shinobi: MkII Merc cards are here?! I thought only Cygnar and Khador were!

Wolf doubted there was a need for 6x Merc Card packs, so I think he's doing on an order basis with other suppliers rather than going through PP. Did you ask him for a Merc pack?

No, I didn't. I had hoped to get my Menoth deck then but it did not come in with the Cygnar and Khador ones. It's OK though - my Menoth deck is in now and will be picking it up this Saturday!
I don't have any mercs at the moment but will be getting some as funds permit.

True; Personally i find it's easier to have the cards as that way i don't need to carry a 'codex' around.
